Scallion Noodles

Time: 10-12 minutes
Level: Easy
Serves: 1-2

Ingredients

• 150g noodles (ramen, egg noodles, or your favorite type)

• 1 tbsp Kun Taste Studio Aromatic Soy Sauce

• 1 tsp sesame oil (optional, for extra nuttiness)

• A handful of fresh spinach or bok choy

•1 egg

• Optional garnish: chopped scallions, sesame seeds

Instructions

  1. Cook the Noodles: Bring a pot of water to a boil. Cook the noodles according to the package directions. Just before they are done, add the spinach or bok choy to the pot to blanch for about 30 seconds.

  2. Fry the Egg: While the noodles are cooking, heat a small non-stick pan over medium heat. Fry an egg to your liking—a sunny-side-up egg with a runny yolk is highly recommended, as the yolk will create a creamy, delicious sauce.

  3. Assemble the Bowl: Drain the noodles and greens well. Place them in a serving bowl. Add the Aromatic Soy Sauce and sesame oil (if using). Toss everything together until the noodles are evenly coated.

  4. Serve: Top the noodles with the fried egg. Garnish with chopped scallions and a sprinkle of sesame seeds, if desired. For the full experience, break the yolk and mix it into the noodles before eating. Serve immediately.

Pro Tips

  • Don’t Overcook the Noodles: Cook the noodles until they are al dente (still have a slight bite). They will continue to cook a little from the residual heat.

  • The Runny Yolk is Key: The magic of this dish is the combination of the savory soy sauce and the creamy, rich egg yolk. Don’t be shy about letting that yolk run!

  • Add Some Protein: For a more substantial meal, add some leftover shredded chicken, pan-fried tofu, or edamame.
